Coconut and Almonds Pastries - Recipe

Before starting, grind the almonds to obtain a medium-coarse powder.
Mix to the almonds powder the coconut, the sugar and the cinnamon.
Whip to stiff peaks the egg whites and add them slowly, stirring in the same direction, to the mix.
Form with the mix little balls with your hands and lay them on a cookie sheet.
Bake in the oven for 10 minutes at 400F
If the mix is hard to shape in balls, add 1-2 tablespoons of water until you obtain the perfect consistency.
