Ingredients:

  • Ground Beef

    1 lb
  • Bread Crumbs

    5 oz
  • Pancetta

    3 slices
  • Red Bell Peppers

    1
  • Eggs

  • Celery (chopped)

    1 tbsp
  • Garlic

    1 clove
  • Salami

    6 slices
  • White Monterey Jack Cheese

    3 slices
  • Salt

    to taste
  • Black Pepper

    to taste
  • All Purpose Flour

  • Canola Oil

Cooking Directions:

In a food processor, grind the bread with pancetta or bacon, 3/4 of the red pepper, celery and garlic.

In a large bowl, mix, with the help of your hands, the flavored grated bread with the ground beef.

Add the two eggs and knead to obtain an homogeneous dough. If the mix is too sticky, add some more grated bread. If too dry, add one or two tablespoons of water.

With your hands, press the meat loaf mix to obtain a large, rectangular layer about 1/3 inch thick and 10 inches length.

Lay lenghtwise, in the center of the meat loaf mix, the salami thin slices, then the sliced cheese and last the remaining sliced red pepper.

Carefully, roll the meat over the filling from both sides and press with your fingers to close the roll and form a meat bag, as big as a fist and long about 10 inches.

Spread some flour all around the meat loaf and carefully transfer it in a baking pan greased with the canola oil.

Bake at 400F for about an hour or until the outside is only slightly crusty.

Serve with a side of french fries, baked potatoes or with a mixed green salad.
