Zucchini, Cabbage and Tomato Stew - Recipe

Before starting, wash and slice zucchini, tomatoes and onions. Shred the cabbage
In a large non stick sauce pot, heat the extra virgin olive oil and saute the onions until lightly brown.
Add the zucchini and stir fry quickly on high heat, stirring continuously.
When the zucchini start to wilt (about 5 minutes) add the shredded cabbage and sauté for additional 5 minutes, stirring.
At this point, add the cubed tomatoes and the bouillon together with enough water to almost cover all the vegetables.
Lower the heat to medium-low settings and let simmer, covered, for about 30-40 minutes. Stir from time to time.
When all the vegetables are fully cooked and the stew has reached the desired consistency, adjust with salt and pepper and serve.
