Thoroughly wash the kale and dry it very well. Remove the stems and chop the leaves.
In a large pan, heat the oil and stir fry the cubed ham until lightly brown.
Add the kale and let cook for 5-10 minutes on medium heat stirring frequently. If desired, add one or two tablespoons of water to keep the kale moisten.
Season with salt, black pepper and seasoning of your choice and serve.
