Spiced Spinach is a delicious recipe for a spiced, light and yummy side dish. Great for accompany meat meals or as an hot starter. Perfect with red wine.

Ingredients:

  • Spinach

    1 lb
  • Hot Peppers (round, in oil or water)

    to taste
  • White Monterey Jack Cheese

    3 slices
  • Garlic

    1 clove
  • Onions (finely chopped)

    1
  • Extra Virgin Olive Oil

    3 tbsps
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Wash and boil the fresh spinach in salty water for 5 minutes. Drain using a colander.

Heat a large pan, add oil. Wilt minced onions and crushed garlic. Add the spinach and the finely chopped hot peppers. Adjust of salt and pepper.

Cook for 5 minutes uncovered or until the water is almost evaporated stirring from time to time. Add the cheese in small pieces and stir well.

Remove from heat and serve hot.


Tips:

If you use frozen spinach add them directly in the pan to the sauteed onions and garlic. Cook them covered at low heat until they soften and then proceed as above.
